A lovely way to end a Christmas evening is with this cheese balls.
When making cheese balls I usually go for a mild cream cheese and add some flavours to the mixture but a strong soft cheese like a creamy goats works really well too. Serve them with a variety of different crudités and crackers and you are sure to please everyone.
- 350g full fat soft cream cheese
- 100g mature cheddar, grated
- 30g dried cranberries, finely chopped
- 50g walnuts, finely chopped
In a bowl mix together the cream cheese, cheddar, half the cranberries and half the walnuts until well combined.
Using your hands, roll the cheese into a spherical shape and cover in the remaining chopped cranberries and walnuts.
Refrigerate for at least 20 minutes before serving.
Best served with water crackers and toasted ciabatta.
